Summary

The problem of functional foods with bioactive compounds is extremely relevant for the food industry.

The antioxidant and antimicrobial activity of plant extracts, rich in polyphenols, are a promising source for alternative solutions to substitute of certain synthetic food preservatives. The presence of natural antioxidants can prevent diseases related to oxidative stress, with effects of protecting and improving general health.

The overall objective of this project consist of complex use of agricultural resources and waste in order to achieve sanogene products fortified with antioxidants, molecules whose sensitive biological effect can be affected by both conditions of food manufacturing and storage, as well as the tract gastrointestinal. Research will contribute to the production of functional foods, able to reduce the impact of stress oxidative and nutritional allergies, contributing to integration of sanogenic food concept and enhanced competitiveness of the local businesses. The project also involves the important education aspects. Thus, researchers and doctoral students involved in this project will train and improve the professional skills; the scientific quality of human resources will be improved.
