The aim of the project
IZOTRAS project aims to develop the traceability methods and systems that will enable the objective verification of the origin of wine and honey in terms of its geographical, botanical, authenticity along the chain production.







The IZOTRAS project will enhance the state of the art of the traceability methods and systems by following general and specific objectives:

  • Study of the most important parameters that can be used in traceability and authenticity of honey and wine
  • Develop new, robust, accurate and advanced methods for determining origin of honey and wine:
    1. Develop the new methods in order to establish the water-soil-plant / must-wine traceability related to geographical origin, year of vintage, grape cultivar and meteorological conditions
    2. Develop the new methods for the identification of water-soil-plant / nectar-pollen-honey traceability markers in relation to the botanical and geographical honey authentication
  • Develop new advanced “fingerprint” methods that can establish honey and wine adulteration along the production chain:
    1. Applied the new advanced method for detecting the wine adulteration along the production chain
    2. Develop the new method to establish honey authentication and adulteration along the production chain
  • Elaborate experimental new models to integrate the data obtained in objectives 2 and 3
  • Dissemination of the results and teaching of the young researchers in the field of the traceability of the food.
