Consumul de coloran\u021bi alimentari artificiali a crescut cu 500% \u00een ultimele 50 de ani. Sunset Yellow (SY \u2013 E110) este unul dintre cei mai importan\u021bi aditivi artificiali, folosit extensiv pentru a \u00eenlocui culorile alimentelor naturale \u00een mii de produse, \u00een special produsele pentru copii. Controversele legate de utilizarea acestui colorant azoic dateaz\u0103 din anii 1920, atunci c\u00e2nd consumul lui a fost asociat cu hiperactivitatea, hipersensibilit\u0103\u021bile, problemele de \u00eenv\u0103\u021bare \u0219i efectele negative asupra r\u0103spunsurilor imune celulare la copii. \u00cen ultimii ani, dovezi din ce \u00een ce mai numeroase indic\u0103 faptul c\u0103 ingestia repetat\u0103 a acestui colorant poate provoca efecte severe asupra s\u0103n\u0103t\u0103\u021bii, inclusiv: toxicitate pe termen scurt, mediu \u0219i lung, r\u0103spunsuri alergice, afec\u021biuni respiratorii, alterarea parametrilor reproductivi \u0219i neurocomportamentali, reducerea greut\u0103\u021bii timusului, modificarea num\u0103rului de monocite, migrene, eczeme, anxietate, precum \u0219i posibilele efecte cancerigene. \u00cen acest context general, \u00eembun\u0103t\u0103\u021birea siguran\u021bei \u0219i calit\u0103\u021bii alimentelor este esen\u021bial\u0103 pentru bun\u0103starea uman\u0103, iar utilizarea intensiv\u0103 a SY \u00een sectorul alimentar este corelat\u0103 cu necesitatea dezvolt\u0103rii unor instrumente analitice de \u00eencredere, precise, sensibile \u0219i selective pentru identificarea \u0219i cuantificarea acestuia, ceea ce a reprezentat \u0219i scopul primordial al proiectului PORTA-SYD. \u00cen acest sens, pe parcursul derul\u0103rii proiectului s-a dezvoltat, fabricat, testat \u0219i validat la nivel de laborator o tehnologie inovativ\u0103 de detec\u021bie electrochimic\u0103 a colorantului alimentar SY. Prototipul platformei electrochimice dezvoltate ofer\u0103 o solu\u021bie real\u0103, complet integrat\u0103, de detec\u021bie selectiv\u0103, rapid\u0103 \u0219i precis\u0103, a aditivului SY. Acest sistem combin\u0103 eficien\u021ba detec\u021biei \u0219i opera\u021bionalitatea \u00eentr-o form\u0103 de mici dimensiuni prin integrarea de suprafe\u021be senzoristice pe baz\u0103 de grafene ceea ce a condus la o capacitate de detec\u021bie crescut\u0103 raportat la alte sisteme clasice de detec\u021bie.
