Objectives


1. Assessing the isotopic and elemental fingerprint of Romanian honeys with a special emphasis on high-value Romanian honey types (i.e. black grass, strawberry, coriander, thyme, honeydew honey)

2. Development of a cryogenic distillation prototype for the water extraction from honey

3. Assessing the spectroscopic (vibrational and fluorescence) profile of Romanian honeys

4. Development and identification of the best model for the recognition of honey botanical origin. Isotopic and elemental profiling versus untargeted metabolomics.

5. Development and identification of the best model for geographical differentiation of honeys. Isotopic and elemental profiling versus untargeted metabolomics.

6. Testing the possibilities and limitations concerning the qualitative and quantitative honey adulteration detection based on untargeted metabolomics and artificial intelligence – (ML).
