Summary

Regulations and directives were elaborated in European Community in order to ensure a sustainable life quality for the community citizens by a rigurous control of the quality of the foodstuff and by the limitation of the impact that pollution could have on the living organisms in general an on humans in particular.

One of the main vectors through which the pollutants can reach inside the organism is water. We mean the drinking water, rainwater, river water, lakes water, etc. By water conveyance, the pollutants may pass in the plant organism, than in different foodstuff prepared from these plants. It is the case with the wine, for instance.

From the perspective of the adherence of Romania to The European Union, this project aims the development, implementation and the certification of analytical methods for the control of the quality of water and wine. In what concerns water, we are taking into account the elaboration of highly sensitive methods for the identification and the quantification of organic and anorganic pollutants concentration: volatile organic compounds and heavy metals. In the case of wine, by isotope ratio 13C/12C measurements it is possible to put in evidence eventual tentatives of falsifying these drinks.
